Soup has been part of the human diet since approximately 600 B.C., when it was sold by Greeks in street stalls as the first “fast food” of lentils, beans and peas. Today, Americans consume approximately 10 million bowls per year, with a virtually unlimited variety of ingredients. Soup is the supreme comfort food.
Soup’s benefits go far beyond tasting good on a cold winter day. When you have a cold, scientists have discovered that eating soup can loosen mucus and help relieve congestion, as well as act as an anti-inflammatory. When you need a quick meal, all you have to do is throw whatever you have in the refrigerator or cupboard together into a soup kettle and let it simmer. When you are on a tight budget, you can stretch your ingredients by adding liquids to the pot and a loaf of bread to the table. Many soup ingredients, such as vegetables, lentils, beans and noodles, are inexpensive in their own right.
